This is a very quick and easy recipe to throw together, when you have very little time, or energy, to cook.
What’s great about this quick lunch or dinner, is that it is ridiculously healthy.
This recipe will serve about 4 depending on your serving sizes, I made this for myself, my husband and our son, and I had leftover for my lunch the next day. It doesn’t take long in the actual cooking time, all the time is in proper prep and the cooking will only take about 10 mins total.
Times will vary depending on stove type.
2 Large Chicken Breasts Diced
Whole head of broccoli cut into florets
2 Avocados diced
1 Tomato diced
1/2 Lemon or 1 Whole Lime juiced
1/2 Cup Brown Rice
1 Cup Quinoa
Tablespoon Coconut oil
2 cloves of garlic minced, or 1 teaspoon of jar minced garlic.
Pinch of salt
Greek yogurt to put on top if you like.
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon dried oregano
1 teaspoon sweet/smoked paprika (if you like the hot one feel free to substitute)
1 & 1/2 teaspoons ground cumin
pinch of salt & pepper
Mix seasonings together in a bowl
(Want a bit of heat, add either chilli powder or chilli flakes to your taste)
Time to Cook it.
If you have a rice cooker then get it out, otherwise grab a large saucepan, pop in the rice and quinoa along with 3 cups of room temp water and a teaspoon of salt or vegetable stock powder. If you’ve got a rice cooker just put it on and let it go all by itself. In the saucepan; bring to the boil then turn down to a medium low heat and let simmer, stirring regularly to make sure the rice and quinoa don’t stick to the bottom and burn.
I have done this, you do not want this.
You may need to add a little extra water to the saucepan because the water will boil and steam off a lot faster than in the rice cooker.
When the rice and quinoa are done there should be no water left, remove from heat and let sit in its pot until you’re ready for it.
Heat up a frying pan with the coconut oil in, add the minced garlic and chicken, let sear for a minute then sprinkle the seasoning over the top and mix the chicken around with a large spoon or egg flip until chicken is completely coated in the spice mix and leave cook for another few mins until chicken is done.
In a medium sized saucepan, boil lightly salted water and quickly blanch the broccoli, only for a minute or two, then into a colander to strain.
In a bowl mix the Avocado, Tomato, Pinch of salt and Lemon/Lime juice together.
That’s it, you’re done.
Plate up, top with the Greek yogurt or salsa if you like and enjoy.
